Role Overview:

As Executive Chef, you will be the culinary visionary and operational leader responsible for the entire kitchen and food production operation at one of HMH’s premier properties in Dubai. You will set the strategic direction for culinary programmes, lead a high-performing team, ensure impeccable quality and consistency, and elevate guest experience through creative cuisine aligned with brand standards.

Key Responsibilities:

• Develop and implement culinary strategies, menus, and concepts that reflect the hotel’s positioning and enhance guest satisfaction, while maintaining profitability and operational efficiency.
• Lead, train and mentor the kitchen team (including sous chefs, station chefs, line cooks and support staff) to deliver consistent, high-quality food production, maintaining high standards of presentation, taste and hygiene.
• Oversee all kitchen operations: food preparation, production, plating, service coordination, inventory management, cost control, vendor sourcing and compliance with health & safety regulations.
• Monitor food cost, labour cost and waste, identify opportunities for improvement and implement control measures to meet budgetary targets.
• Maintain up-to-date knowledge of culinary trends, dietary preferences (e.g., vegan, gluten-free) and guest feedback to continuously innovate menus and enhance service.
• Collaborate closely with F&B leadership (e.g., Food & Beverage Director), banquet and restaurant managers to ensure seamless coordination between kitchen and service teams for à la carte, banquets, events and in-house outlets.
• Uphold and enforce all sanitation, hygiene and safety standards in accordance with UAE regulations and brand requirements, championing a clean, safe and efficient kitchen environment.
• Qualifications & Experience:
• Proven track record (typically 8+ years) of progressively senior culinary leadership roles in upscale or luxury hotels / resorts, preferably within the UAE or Middle East hospitality market.
• Formal culinary qualification (e.g., diploma, degree) or equivalent certified professional culinary experience.
• Strong knowledge of international and regional cuisine, menu development, cost control and kitchen systems.
• Excellent leadership skills with the ability to inspire, develop and retain a diverse team in a fast-paced, multi-outlet hotel environment.
• Exceptional standards of food quality, presentation and guest service, with a keen eye for detail and innovation.
• Strong financial acumen, able to analyse performance metrics, set and manage budgets and ensure profitable food operations.
• Effective communication skills, culturally aware and able to work in a multicultural environment.
• Fluent in English; knowledge of Arabic is an advantage.
