We are currently seeking a Development Chef with a specialty in Breakfast, Bakery, and Pastry to join our dynamic culinary team. This is a hands-on, creative role ideal for a chef with strong technical expertise, operational knowledge, and a passion for food innovation.

Key Responsibilities

• Recipe & Product Innovation:
  Develop new recipes and enhance existing ones with a focus on quality, innovation, and cost-efficiency.
• Operational Recipe Development:
  Ensure recipes are operationally executable across all locations while meeting brand standards.
• Market Trend Analysis:
  Stay informed of market trends in breakfast, bakery, and pastry, and adapt offerings to remain competitive.
• Quality Assurance Liaison:
  Partner with QA teams to monitor and improve product quality, including taste, appearance, and consistency.
• Strategic Food Development:
  Design and implement comprehensive strategies for food development, including products, recipes, and procedures.
• Field Roll-out & Implementation:
  Lead rollouts of new items, creating SOPs, instructional videos, and training materials.
• Operational Training:
  Train Back-of-House staff on recipes, cooking techniques, and food handling procedures.
• Product Presentations:
• Present new dishes and techniques to internal teams and management.
• Product Evaluation & Costing:
  Conduct yield testing, hold-time studies, and ensure accurate portioning and cost control.
• Training Material Development:
  Develop instructional content to support operations teams in executing recipes correctly.
• Training Program Reinforcement:
  Ensure consistency across outlets by enforcing and updating culinary training programs.

Qualifications

• Minimum 5 years of experience in Production R&D with a strong background in breakfast, bakery, and pastry.
• Bachelor’s Degree in Food Technology or Culinary Arts certification.
• Familiarity with HACCP, ISO 22000, International GMP, and Dubai Municipality Food Safety Guidelines.
• Strong creative and analytical thinking.
• Excellent communication, training, and leadership skills.
• Attention to detail and the ability to make sound culinary decisions.
