The Pastry Chef will lead the dessert division and take full ownership of pastry production, menu planning, and presentation standards. This role is suited to a professional who combines advanced technical pastry knowledge with artistic vision. You will be expected to create contemporary plated desserts, pastries, and confections that align with fine dining expectations while maintaining consistency across daily service. The candidate must demonstrate leadership abilities, organizational strength, and a passion for delivering memorable sweet creations.
• Prepare and present a diverse selection of desserts such as layered and laminated pastries, artisan cakes, delicate custards, refined chocolate creations, and signature plated sweets.
• Conceptualize seasonal dessert menus in coordination with the senior culinary team.
• Ensure flavor balance, texture harmony, and elegant presentation in all items.
• Supervise junior pastry cooks and assistants, providing hands-on training and mentoring.
• Manage ingredient ordering, stock control, and proper storage of dairy, flour, fruits, and chocolate.
• Maintain strict hygiene, food safety, and sanitation practices within the pastry kitchen.
• Control portioning and minimize wastage to achieve cost efficiency.
• Oversee dessert pass during service and conduct quality checks before plates reach guests.
• Introduce new techniques and modern pastry trends to continually elevate offerings.
• Minimum 3 to 5 years of experience as a Pastry Chef in luxury restaurants or five-star hotel environments.
• Formal education in culinary arts or specialized pastry training preferred.
• Strong expertise in dough handling, baking science, and decorative finishing.
• Ability to perform effectively in high-pressure, fast-paced service periods.
• Excellent communication skills and a collaborative team mindset.
• Knowledge of food costing, inventory rotation, and staff scheduling.
• Competitive salary range AED 4,500 to AED 6,000 per month, depending on experience.
